Title: Custard Pear Tart

Yield: 12 Servings

375gPastry, frozen, and thawed.
1cVanilla custard
2 Eggs, lightly beaten.
425gPear halves, canned or preserved, drained.
1tbSugar, brown
1/4tsCinnamon

Roll out pastry to line a 20cm pie dish and prick pastry with a fork. Top with greaseproof [waxed] paper and fill with dried beans. Bake at 200^C for 12 minutes, remove paper and beans and allow the pastry to cool.

Combine eggs and custard together. Arrange pears on pastry base and pour over custard. Sprinkle with brown sugar and cinnamon. Bake at 200^C for approximately 40-45 minutes until custard has set. Remove from oven and cool slightly. Serve cut into wedges.
